It seems that at some point around Harlem Nights Eddie got pretty full of himself, and he has never been able to keep that quality out of his "acting."

I suspect it was Raw that did it. Not right away: his ego was still in check during filming for Coming to America. By the time they got to Harlem Nights he was starting to believe all his own hype from the popularity of Raw

True. it worked in Harlem Nights because his character, Quick, was supposed to be young and cocky. It just never worked in his other films.... "cocky" and "underdog comedian character" don't work together.
