I need a new series to watch.
I've finished all of Stargates except the last movie (Amazon 3rd-party vendor is stiffing me), and the new SG-Universe... which I am waiting for the dvds to come down in price.
I have watched:
Buffy/Angel
Battlestar
Babylon 5
Stargate SG-1/Atlantis
LOST, except the last 2 seasons which I will get around to eventually...
But I need a new, good sci-fi series to watch that I missed the first time around.
Have I seen all of them worth watching?

I'm sure you've seen Firefly and just forgot to mention it.
You should seriously consider Dr. Who's revival. And Torchwood to go along with it. Quite a bit campier than anything you've mentioned, but really high quality stuff. Especially David Tenant. Although Matt Smith looks like he will quickly eclipse even David as best Doctor.
I would recommend Being Human, although it's nowhere near epic yet. But it does have some potential.
I've heard very good things about True Blood, but not yet seen it myself.
Oh, and of course, if you haven't seen Eureka then you're missing out.
Santuary is not bad. Not sure how strongly I'd recommend it ... except it does have Amanda Carter in it so there's something.
I wouldn't bother with the new V, it's a bit of a disappointment IMO.
Of course there's tons of classics to consider as well, but you've probably seen most of the old stuff I'm betting.
EDIT: As to SG:Universe, take your time. It's worth watching, but ... well, there's no rush.

If you want Sci-Fi, try Eureka. I could lend you Season 1 if you'd like. I think you'll like it. Season 4 just started this week I believe.
If you'd like something more in the comedy realm, but still firmly set in Nerdvana...The Guild is a cute little series, but a season takes maybe two hours to watch? (They're web shorts.)
If you'd like to go Drama, give The Shield a try. If you don't want to watch the series after the first episode, then turn it off.
You could also go the Dexter route. Great series.
And I believe you started Burn Notice. The third season is on DVD, and the fourth is airing now.

Shield and Wire are both great. Wire being my overall favorite show.
My Fiancee swears by Justified, the new show on FX.
Also, I watched all of Archer on Netflix instant a months or so ago. Funny shit.
One of my totally unerdy friends says that Legend of the Seeker is good. Cannot confirm or deny that one.

I don't know about Amazon, but you should start here. If you find you are enjoying it, then you'll want to also watch Torchwood starting after season 2 of Who. (Unlike Angel/Buffy, they two don't overlap their seasons much. You'd watch Season 2 of Who, then Season 1 of Torchwood, then Season 3 of Who, etc).
If you want someone to discuss it with let me know, and I'll rewatch it as you do. It'd be nice to see it all again.

Yup! Although with the caveat that that's the least of the new seasons, at least IMO. Still very good, though, and grounds you into the storylines that go through the whole new series.
EDIT: I should warn you that it IS a British show. The Doctor is sometimes a bit ... well, there's this no guns thing, and he always tries to avoid killing people/aliens/things, and when someone does get killed he gets really angsty about it, even if they were despicable and needed to be killed. So sometimes you might find yourself a bit annoyed with the whole thing. But the rest of the time it's really good.

I remember season one starting up last year and apparently it's doing well. Season two is starting on ScyFy soon.
I actually don't know if it's good or not, but it's SciFi.
