I feel like I keep hearing about things like this for years, and it’s still not super widespread.

I’d like to try it just to see how I do :)

Let's be honest, it's probably not super popular because it proves sometimes are probably worth a lot less than advertised (college, HR, etc.)...

As cool as I think this is, what happens when applicants find out? They could practice Starcraft or Civ for weeks ahead of time and learn tricks.

Firms need a bunch of options so nobody can master just one. That one where you defuse the bombs could be a perfect one where teamwork and communication is key.
