I haven't done it in over a decade.

If I bought a SSD drive, could I plug it in, clone my current boot drive, pull the current boot drive, and just boot up from the new SSD drive?

Or would I basically need a fresh install on the SSD?

Yes, you can clone.

I've been using EaseUS Clone Drive

Are you interested in one of my SSDs? :)

It's probably not possible to clone a 600GB RAID0 drive onto a 500GB SSD, is it..............................

I thought a clone moved shit bit for bit to the same spot on the drive.

Depends on the cloning software, presumably.

A cloner guarantees your data integrity 100%. However it does that is up to it. Copying a shitty, defrag'd sector is stupid, so it might optimize or use other tricks.

What kind of SSD did you get? My roommate seems to think only Intel has their shit together in that field.

Looks like a Samsung. The word on the outside of it says "Samsung" which is why I think that.

Depends. EaseUS can clone to a smaller drive, as long as there is enough unused space for it to fit (plus some margin, iirc).

I use Samsung drives, 840/850s. Some EVO, some pro, some regular. I've only had 1 fail, and they replaced it pretty quickly.
