I've been experimenting lately with a lot of recipes I never tried before. I made this the other night.... it was fucking incredible.

My only change was.... instead of making the beans from scratch, I used 4 small cans of pre-cooked red beans. I drained them first, and started from there with the 6 cups of water, etc. Let simmer for about an hour, add the meat, let simmer another 30.

Fuck, it was good. Made the rice separately and put them in a bowl together. Seriously, fuck.

Good red beans and rice is a fantastic comfort food.

What's the size of the can of beans you're using? I picked up a couple 16-oz ones.

I could only find the smaller, regular sized cans, when I shopped. I used four. 2 of the big cans would be fine. Are the smaller ones 16oz? Don't have one in front of me.

I used 4 smaller cans. I didn't have the big cans. I don't know the volumes/weight of them, offhand.
