Rimworld

If you like Dwarf Fortress and Prison Architect, you might want to give Rimworld a try. It's essentially a less complicated version of the former built in a style reminiscent of the latter, set in a Firefly-esque sci-fi universe. I can't seem to stop playing it yet.
Even though it's simpler than DF it's still pretty challenging at the regular difficulties. I've killed off a few colonies already. One was lost to starvation in an unexpected volcanic winter, one was lost to heat stroke and a firestorm that took out the power to the air conditioning while a rampaging rhinoceros kept everyone away from fixing it, and one that was already having moody depression problems spiraled out of control into berserker madness after the pet dog was killed by a turtle. I think I'm going to turn down the challenge a notch for my next game.
