Many enemies have the ability to move you. A good tactic for you would be to position yourself so that you're a good distance from the enemies, before they go aggro, and start sniping. They'll run at you, but you should drop a few or most before they get there. Then switch to close range weapons, and drop your turret if needed.
If you have trouble with mobility, make sure you lean towards guns with bigger magazines and quick reload times. Sure that other gun might hit for double the damage, but that's at 5 shots every ten seconds, while the SMG you're holding hits them 50 times in that span...
Also, when you're fighting bosses, or really tough enemies, try to focus them. If they take you down, you can then focus on a weaker enemy while you're dying and get that second wind. Since you're using Axton, your turret will get you a lot of second winds.

Problem with grenades is that you can only hold 3, right? I got a grenade modifier the other day, but rarely get grenades to pick up. Boom and Bewm had several, but that's about it.
And I keep running out of sniping ammo on big missions.

There are ways to increase your ammo capacity, but not until later on. Early going, you'll be running out of ammo often. Keep one gun of each type and loot everything. Always load up on ammo before leaving an ammo shop.

Ammo will become less of a problem once you hit Sanctuary and will continue to dwindle in importance after that. Up until then, it's cheap ($10-20 per mag/clip depending on type). Always walk away from the ammo store completely full. The only time I had ammo trouble after that was the arena we went through; that was an edge case.
Going solo as Axton, though, deploy that turret as much as possible because it will draw a lot of fire. During cooldown, take cover and wait until redeploy. Get skills/relics/class mods that lower cooldown.

Speaking of which, I've started gathering skill points, but not sure how to use them. Any advice for Axton? Put it in the turret?

Basically, do whatever suits your play style.... or, at least, the play style you wish to pursue. Out of curiosity, you have a good gaming mouse, yes? I can't imagine trying to play a FPS any more without a mouse with a high refresh rate and programmable sensitivity right on the hardware.

The thing I like to keep in mind is that I'm building up to the last item in a particular skill tree. For Axton, the one that's most popular is the tree that ends with the dual turret ability.
Guerilla: Sentry, Willing, Scorched Earth (if you want rocket turrets)
Gunpowder: Seems like it's mainly about increasing character gun damage/reload/etc. Haven't explored/though about this branch much yet. The Longbow turrets don't seem to be that awesome to me.
Survival: All about making Axton a bitch to kill. Dual turret tree, develop this one. Preparation, Phalanx, Resourceful, Grit, Gemini, Quick Charge.

That is not how I built my Axton, and honestly, do it however it fits your play style. Don't feel like you have to copy what works for someone else.
For example, that build goes for the shields and skips the two turrets. So that guy probably stays close to his turrets.
I don't. I drop my turret and then run headfirst into enemies. I don't need that shield.
I'm currently building towards the ability to drop two turrets at the same time. It'll be like having my own army.
And I echo what Malcolm says: "Loot everything." Even if you're full on ammo, keep opening chests for money, eridium, and the bad ass points that come with opening chests.
Always be looting.

Don't sweat making the wrong skills choices, either. Eventually you'll find a "change me" station which will, for a small fee, allow you to reallocate all your skills points however you want. This means you can pull your solo Axton into a co-op game, respec him to fit the team dynamic, and reverse later on for cheap.

According to Amazon, I have programmable sensitivity:
In-game sensitivity switching

I have the G5 or G7... the number is on the top of the mouse and it is rubbed off. But yes, you have a gaming mouse. So good. It was Quake 3 (or so) when I decided the standard Microsoft Laser Mouse with its 200 DPI was no longer cutting it.
Personally, I like a lower sensitivity setting when I am sniping and zoomed in, for more precise sniping. You might try that.
