< Fucking yes >.QUOTE "Our research showed one simple – but fundamental – issue with successful cooking: it's nearly impossible to accurately control the temperature of your cookware," they said. "Even worse, we found that stoves set to "medium" can vary as much as 100 degrees Fahrenheit between different cooktops!" Amen. Fucking pain in the ass to dial in temps with the laser thermo I got. Interesting, but looks like just another thing to clean.I cook a lot so I know where to set all my knobs for whatever general temp I need, and if I need specific temps, like when I am brewing, I just throw a thermometer in it and babysit. edit - gas stove, btw. I think they are superior. Posted by Vince on Apr. 08 2015,10:53
Real cooks don't need to know the exact temp. You just know your food.

They do have a point though with knobs being different from brand to brand, and there really is no standard for what "3" means on a 1-6 knob. But yeah, gotta know your food, too. Posted by Malcolm on Apr. 08 2015,11:01

After setting off my smoke detector once, I decided I do need to know the temp, at least within a few degrees, especially when I'm under 212F. Sometimes I will open my oven and, even in the absence of smoke, it will set off the fire alarm 20 feet away in the next room. 1. It's a good thing I don't live in a place which requires sprinkler systems. 2. I really should replace that detector. Posted by Vince on Apr. 08 2015,11:35
Go camping with a master of the dutch oven and the camp fire. Knowing the temp is over rated :-)

My wife knows all about the Dutch Oven.

QUOTE Real cooks don't need to know the exact temp. You just know your food. True of vegetables and simple meat dishes. Not so much when it comes to more advanced cooking, like candy making. When working with melted sugar as little as 1/10th of a degree can make a huge difference. |
