Have a bunch of jalapenos, banana peppers, and tomatoes left at the end of the season... I just threw a bunch of all 3 into the food processor, and liquefied it.  Added a little NaCl for preservation purposes.

I can't decide if it tastes good or not.

Has a very peppery smell, which isn't reminiscent of hot sauce, but the taste is right.  Not super strong, but on par with the hottest taco sauces out there.

Refrigerated it to see if that makes it a little less pungent.

Might be good to add a few pinches of spice, like maybe a little cumin.  Could even out the flavors.

Hard to describe the overriding aroma... sort of like... you are smelling the cut stems and leaves of the pepper plants.  But there isn't any of that in there.

Dunno.

Cumin's a typical mexican food ingredient.  Not sure if it's in hot sauces, but it'll give it a bit of enchiladaness.  Others to consider are garlic, sage, or maybe a little sugar and ginger powder.  But not all of the above, they'd clash.

I think many hot sauces have vinegar in them.  Although, I don't know why.  Maybe it's preservation.  Maybe it's to provide a medium for the sauce.

I think I'll throw in a dash of vinegar and garlic powder, tomorrow.  See what that does.
